What microorganism(s) are used? 

Yeast is used to produce the alcohol 

 

What is your production/fermentation process?

RBD has a large 200 Litre cooker they use to start the process.  This breaks down the grains, pulling out the sugars that the yeast will later convert to alcohol in the process of fermentation. They add these cooked grains into smaller white barrels where they add the yeast. This mixture will sit for a couple of days as the yeast works. The yeast will consume the sugar and produce alcohol. The yeast will continue making alcohol until they run out of sugar or the alcohol content gets too high and kills off the yeast. Once the fermentation has stopped after a few days they transfer this mixture into their still which uses distillation to separate the alcohol from everything else. They will repeat this distillation a few times to produce a better end product. After the distillation, they will have around 10L of 100% alcohol from the 200L they started with. At this point, they can add different botanicals to create any of their 4 products. After they have repeated the distillation a few times and added their desired flavours they can then dilute the alcohol to the correct percentage and then bottle it. 

 

What raw materials do you use? How do you source them (local or not?) 

Raw materials used include wheat, oats and barley. Botanicals are also used to flavour their final products and can include things like green star anise and fennel for the absinthe or chamomile for the devil’s flower garden gin.

 

How do you handle waste management? 

They send as much of their used oats and barley to local farmers who are able to feed it to their animals as these grains are still high in nutrients and provide many vitamins and minerals to the animals.

Red Bridge Distilling makes vodka, gin, devil’s flower garden gin, and absinthe. 

Traditionally absinthe is served with a sugar cube and ice cold water. The consumer can then pour the cold water over the sugar cube to dilute and sweeten the absinthe to their liking. However, Red Bridge Distillings absinthe has a unique, natural sweetness to it making it enjoyable just over ice.

Products are available at various liquor stores and restaurants in Kamloops. They can also be found at the Kamloops farmers markets or you can go visit them at their distilling facility
