History of Wine

Although France, Italy, and Spain are well known for their winemaking and wine culture, the history of wine does not begin in these places. The earliest evidence of wine may be found in Georgia, Iran, and Sicily, dating back to as early as 4000 BC, and its numerous biblical references indicate its early origins and significance in the Middle East. According to researchers, Armenia is home to the world’s oldest winery ever discovered. Wine reached the Balkans (a geographical location in Southeast Europe) by 4500 BC and was celebrated in the wine trade in Greece, Rome, and Thrace. In the 16th century, the voyages by Christopher Columbus brought European grape culture to South America, which was shortly followed by the first winemaking in Canada by French Canadians. 

 

Fermentation process / Microorganisms involved

In winemaking, fermentation is the biological process that converts grape juice into alcohol. Winemakers add yeast to the grape juice, which converts the natural sugars found in the grapes into ethanol and carbon dioxide. Ethanol (or alcohol) is the key product of wine fermentation, while carbon dioxide is a byproduct that is typically released into the atmosphere. Fermentation in winemaking is important not only to create alcohol, but it can also influence the flavor, aroma, and texture of the wine and different species of yeast will each create their own unique product! The process of winemaking is slightly different between red and white wines; white wine is created by fermenting only the grape juice, while red wine is created by fermenting the whole grape (skins, seeds and all) which gives red wines their dark red color and bitter characteristic.

 

Health benefits

Although wine can be packed with the following health benefits, it is an alcoholic beverage that should be drunk in moderation. The optimal daily intake of wine is 1 glass (150 mL) for women and for men it is 2 glasses (300 mL). Of course, this will vary for each person and drinking more may impact your health.

  • People used to drink wine instead of water to relieve their thirst centuries ago. During that time, water wasn’t always safe, and natural fermentation in winemaking might kill salmonella and cholera-causing bacteria.

 

Misconceptions

  • Wine is a living thing. False! Once fermentation is complete, the yeasts die and the wine becomes a non-living thing.
  • Wines get better with age. False! Bottles of wine are meant to be consumed within a couple of years of bottling. Although the ageing process is beneficial when done in oak barrels.
