What microorganism is used? 

The Noble Pig uses several yeast strains to ferment their beer, more specifically strains of Saccharomyces cerevisiae and Saccharomyces pastorianus. The type of yeast depends on the desired flavours and profile that head brewer Nick Murphy is trying to achieve. For example, when brewing a hefeweizen, certain yeast strains can be used to give a fruity flavour.

 

What is your production/fermentation process?

The Noble Pig produces around 500 hl of beer per year, which equates to 50,000 L! The bioreactors used to ferment the beer are called conical fermentors, which are cone shaped at the base to allow sediment to drop out before the beer, and also allows for them to collect and reuse their yeast in a method called ā€œre-pitchingā€.

 

What raw materials do you use? How do you source them?

The Noble Pig tries to source local as much as possible. They source hops from the Fraser Valley, but also do import some internationally. This is because the hops found in different areas of the world, such as the tropics, add a unique flavour profile that cannot be achieved from hops grown in BC. Similarly, their yeast comes from different locations as well. Although there is grain grown in BC, the Noble Pig gets theirs from Alberta, due to BC distillers getting priority for barley in BC.

 

How do you handle waste management? 

The waste products, which consists of mostly ā€˜spent grainsā€™ are given to SSOL Gardens in Kamloops to be used as compost. The remaining waste, which is not much, is composted at the Noble Pig. The Noble Pigs kitchen in turn sources veggies from SSOL farms to use in their delicious menu.

Apparently asking a brewer to pick his favourite beer is like asking someone to pick their favourite child. This being said, Nick did mention that lagers and IPAs are the most popular styles of beer. A notable mention can also be made for ā€œPapa Gā€™sā€ ESB (extra special bitter), which won first place in the BC beer awards for U.K. Pale Ale. Nick mentioned that the beer he creates depends heavily on feedback from the community. He likes to sit at the bar and get a feel for what people like and want to see.

  

When did you open? Why did you open? Any fun/interesting history? – Background on producer or company.

The Noble Pig was Kamloopsā€™ first craft brewery and opened up back in 2010. The brew pub was opened by the Summers and Tetreau families, with Nick Murphy as head brewer. The brew pub has four flagship beers that are always available and follow the theme of the classic story ā€œThe Three Little Pigsā€. The lineup is a Munich helles Lager called ā€œStraw Houseā€; a Belgian pepper ale called ā€œStick Houseā€; a mocha porter called ā€œStone Houseā€ and an India pale ale called ā€œBig Bad Wolfā€. The food program at the Noble Pig is also fantastic, with all their food being sourced locally within 100 km. The Noble Pig prides itself on the connections it has with the community and tries to be as involved as it can. The Fun fact: their current patio used to be a pool!

Where are the products available? 

Since the Noble Pig is a brew pub, they donā€™t currently have the space to store a large number of kegs for commercial production. They do however sell kegs to other local restaurants and have off sales in bottles to bring home and enjoy! Additionally, they have keg rentals for parties and events. Otherwise, you can sit up at the bar or on their converted patio space and enjoy a pint and some yummy food right in house!
