What microorganism(s) are used in the fermentation process?  

Saccharomyces cerevisiae/bayanus and other indigenous yeast, Oenococcus Oeni and various species of Lactobacillus and Pediococcus bacteria

 

What is your production/fermentation process? (scale, quantity produced (ex. Number of Bottles per batch or year)) 

Varies in regards to the harvest crops, anywhere from 1500 to 5000 cases per year

 

What raw materials do you use? How do you source them (local or not?) 

Grapes, we farm them ourselves organically

 

How do you handle waste management? 

Compost our pomace (the solid remains of grapes after pressing for juice)
